Ingredients list for Jain Frankie

  • 2 cups Refined flour (maida)
  • 2 Bread slices
  • to taste Salt
  • 1 tablespo Oil
  • 1 teaspoon Mustard seeds
  • 2 Green chillies chopped
  • 5-6 Curry leaves
  • 1/2 small Cabbage finely chopped
  • 2 Raw bananas boiled, peeled and mashed
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Castor sugar (caster sugar)
  • 1 tablespo Frankie masala
  • 2 tablespoons Fresh coriander leaves chopped

Method

  1. Take refined flour in a bowl. Cut bread slices and add in the bowl alongwith salt. Mix well and knead a semi-soft dough using sufficient water. set aside for 30 minutes.
  2. Heat 1 tablespoon oil in a non-stick pan. Add mustard seeds and let them splutter.
  3. Add green chillies and curry leaves and sauté for 30 seconds.
  4. Add cabbage and raw banana and mix well.
  5. Add turmeric powder, salt, castor sugar, frankie masala and mix well. Remove from heat and set aside.
  6. Divide dough into equal portions and roll into medium size round rotis.
  7. Heat sufficient oil in a kadai.
  8. Prick the rotis with a fork and deep-fry in hot oil for 10 seconds.
  9. Add 1 tablespoon chopped coriander in the cooked masala and mix well. Divide the mixture into equal portions shaped into oval patties.
  10. Heat a non-stick tawa. Place a frankie base on it and cook on both sides. Place a pattie on it and fold it. Prepare remaining frankies in a similar way.
  11. Serve hot.
