Ingredients list for Fiery Pepper Chicken

  • 250 grams Boneless chicken cut into cubes
  • 2 Dried red chillies chopped
  • 3/4 teaspoon Black peppercorns crushed
  • 2 tablespoons Sesame oil
  • to taste Salt
  • 1 1/2 tablespoons Garlic chopped
  • 2 teaspoons Ginger chopped
  • 1 Spring onion with green chopped
  • 2 teaspoons Dark soy sauce
  • 2 teaspoons Light soy sauce
  • 1/2 teaspoon Sugar
  • 3 tablespoons Cornflour slurry
  • 1 teaspoon Vinegar
  • to garnish Spring onion greens chopped

Method

  1. Heat 1 tbsp sesame oil in a non-stick wok, add chicken, salt and crushed black peppercorns, mix and sauté on high heat for 2-3 minutes. Transfer into a bowl.
  2. Heat remaining sesame oil in the same non-stick pan, add garlic and ginger, mix and sauté till the raw flavours disappear.
  3. Add dried red chillies and spring onion with greens, mix and sauté for 1 minute. Add the chicken, mix well and sauté and cook for 2 minutes.
  4. Add dark soy sauce, light soy sauce and sugar, mix well and cook for 1 minute.
  5. Add cornflour slurry, mix well and cook till the sauce thickens and coats the chicken well. Add vinegar and mix well.
  6. Transfer into a serving dish, garnish with spring onion greens and serve hot.
