Ingredients list for Egg Pulusu
- 6 Eggs boiled and peeled
- 5 tablespoons Curry Leaves
- 1/2 teaspoon Turmeric powder
- a pinch Fenugreek seeds (methi dana)
- 1/4 teaspoon Mustard seeds
- 1 to taste Dried red chillies broken
- 10-12 Curry leaves
- 2 medium Onions chopped
- 1 tablespoon Ginger-garlic paste
- 1 tablespoon Coriander powder
- 1 teaspoon Cumin powder
- 2 teaspoons Red chilli powder
- 1 tablespoon Tamarind pulp
- to taste Salt
Method
- Heat 4 tbsps oil in a deep non stick pan.
Add ¼ tsp turmeric powder and eggs and sauté, rotating the pan, for 1-2 minutes.
Once the eggs are well coloured, drain and place them in a bowl. - Add 1 tbsp oil to the same pan.
Add methi dana, mustard seeds, red chilli, curry leaves and onions and sauté till lightly browned. - Dilute ginger-garlic paste with 1 tbsp water and add to the pan and mix well.
Add the remaining turmeric powder, coriander powder, cumin powder - and red chilli powder and sauté for 1 minute.
Add ½ cup water and mix.
Add tamarind pulp and salt and mix well. - Add eggs and cook for 1-2 minutes or till the eggs are heated through.
Serve hot.
