Egg Curry

Eggs cooked in bursting-with-flavour coconut masala.Egg being the wonderful source of proteins can be used to make many delicious dishes. One such amazing dish is that of Egg Masala Curry where boiled eggs are just simmered in spicy masala gravy. It has a nice tangy taste of tomatoes coupled with the flavors and taste of the spices that are used. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Egg Curry

  • 6 Eggs hardboiled
  • 1/2 cup Scrapped coconut fresh
  • 2-3 Dried red chillies
  • 1 medium Onion finely chopped
  • 2-3 Garlic cloves
  • 2-3 Black peppercorns
  • 1 teaspoon Coriander seeds
  • 1/2 teaspoon Cumin seeds
  • 1/2 teaspoon Turmeric powder
  • 3/4 teaspoon Tamarind pulp
  • 1 tablespoon Oil
  • to taste Salt

Method

  1. Grind together coconut, dried red chillies, half the onion, garlic, peppercorns, coriander seeds, cumin seeds, turmeric powder and tamarind pulp alongwith some water to a fine paste.
  2. Heat oil in a non-stick pan. Add remaining onion, mix and sauté till golden.
  3. Make a crisscross on the narrow side of the eggs.
  4. Add the prepared paste to the pan, mix and cook for a minute. Add 1 cup water and mix well. Add salt, mix and cook on low heat for 2-3 minutes.Add eggs, mix and cook for 4-5 minutes.
  5. Serve hot garnished with a coriander sprig.
