Dakshin Squares

Rasam powder flavoured cottage cheese spread over toasted brown bread slices and shallow fried. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Dakshin Squares

  • 4 Brown bread slices
  • 250 grams Cottage cheese
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 2 teaspoons Rasam powder
  • 2 Green chillies finely chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 8-10 Curry leaves
  • 2 teaspoons Semolina (rawa/suji)
  • 2 teaspoons Mustard seeds
  • as required Oil

Method

  1. Crumble cottage cheese and place in a bowl. Add onion, tomato, rasam powder, chillies, salt and crushed peppercorns.
  2. Roughly chop curry leaves and add and mix well.
  3. Toast bread slices in a toaster till evenly done.
  4. Add semolina to cottage cheese mixture and mix well.
  5. Place toasted bread slices on a worktop. Spread cottage cheese mixture evenly on top and press. Sprinkle ½ teaspoon mustard seeds on each slice and press lightly.
  6. Heat 1 teaspoon oil in a non-stick pan. Place the prepared bread slices on it, mixture side down, and cook till it turns golden. Flip and cook till the other side turns golden.
  7. Discard the edges and cut into squares. Serve immediately.
