Creamy Chicken Pasta

Ingredients

  • 50 grams boneless chicken, finely chopped
  • 100 grams macaroni pasta, boiled
  • 2 tablespoons oil
  • 2 teaspoons finely chopped garlic 
  • 1 small onion, finely chopped
  • 2 tablespoons refined flour (maida)
  • 2 cups milk
  • Salt to taste
  • White pepper powder to taste
  • 8-10 black olives, sliced
  • 1/2 medium green capsicum, diced
  • 1/2 medium red capsicum, diced
  • 1/2 medium yellow capsicum,diced
  • 1/2 cup fresh cream
  • 1/2 cup grated processed cheese 
  • Finely chopped fresh parsley to garnish

Method

  1. Heat oil in a non-stick pan, add garlic and onion, mix and saute till onion softens.
  2. Add refined flour, mix and saute for 1-2 minutes or till the raw smell of flour disappears.
  3. Add 1 cup milk, stir continuously and cook till the sauce begins to thicken. Add chicken and mix and cook, stirring continuously. Add the remaining milk and mix well and cook for 1 minute.
  4. Add salt and white pepper powder and mix well.
  5. Add pasta gradually and mix well. Add black olives and capsicums and mix well.
  6. Add cream and cheese and mix well.
  7. Transfer into serving bowl, garnish with parsley and serve hot.
