Ingredients list for Chilli Chicken Lollipop

  • 12 Chicken lollipops washed
  • to taste Black peppercorns crushed
  • 2 Green chillies chopped
  • 2 teaspoons Red chilli sauce
  • 1 tablespoon Cornflour
  • to taste Salt
  • 1 tablespo teaspoon Dark soy sauce
  • 1 Egg
  • 2 tablespo to deep fry Oil
  • 1 1/2 tablespoons Ginger-garlic chopped
  • 1 Large onion quartered and layers separated
  • 1/2 cup Chicken stock
  • 1 Small green capsicum cut into thick strips
  • a pinch Sugar
  • 2 tablespoons Cornflour slurry
  • 1 teaspoon Vinegar

Method

  1. Take the chicken lollipops in a large bowl, add cornflour, salt, crushed black peppercorns, 1 tsp dark soy sauce and egg, mix well and set aside to marinate for 15 minutes.
  2. Heat sufficient oil in a kadai, slide in the marinated lollipops and deep-fry till golden brown and crisp. Drain on absorbent paper.
  3. Heat 2 tbsps oil in a non-stick wok, add ginger-garlic paste and green chillies, mix and sauté till golden brown.
  4. Add onion, mix and sauté for 1-2 minutes. Add stock, mix well and cook for 1 minute. Add remaining dark soy sauce and red chilli sauce and mix well. Add capsicum, salt and sugar and mix well. Add 2 tbsps cornflour slurry and mix well. Let the mixture come to a boil.
  5. Add the fried lollipops, mix gently and cook for 1-2 minutes. Switch off the heat, add 1 tsp vinegar and mix well.
  6. Transfer into a serving dish and serve hot.
