History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Chilli Cheese Kulcha Recipe

  • Green chillies finely chopped 2-3

  • Blue cheese 100 grams

  • Refined flour 1 1/2 cups

  • Baking powder 1/2 teaspoon

  • Sugar 1/2 teaspoon

  • Salt to taste

  • Butter 2 1/2 tablespoons

  • Milk 1/2 cup

  • Fresh coriander leaves chopped 1 tablespoon

  • Black peppercorns crushed to taste

  • Ghee melted for brushi

Method

Step 1

Take flour in a mixing bowl, add baking powder, sugar, salt, butter and milk and knead into soft dough. Cover with a damp cloth and set aside for 40 minutes.

Step 2

Preheat oven to 180˚ C.

Step 3

Take blue cheese in another bowl and mash it with a fork. Add coriander leaves, chillies and crushed peppercorns and mix well.

Step 4

Divide the dough into 4 equal portions and shape each into a katori. Place some cheese mixture into each katori, bring the edges together and pinch to seal and shape into a ball. Roll out each stuffed ball into medium thick disc or kulcha.

Step 5

Place the kulchas on a baking tray and brush with some ghee. Put the tray in the preheated oven and bake for 15-20 minutes.

Step 6

Bring the tray out of the oven, arrange the kulche on a serving platter and serve hot.
