Ingredients list for Chilli Cheese Kulcha

  • 2-3 Green chillies finely chopped
  • 100 grams Blue cheese
  • 1 1/2 cups Refined flour
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Sugar
  • to taste Salt
  • 2 1/2 tablespoons Butter
  • 1/2 cup Milk
  • 1 tablespoon Fresh coriander leaves chopped
  • to taste Black peppercorns crushed
  • for brushi Ghee melted

Method

  1. Take flour in a mixing bowl, add baking powder, sugar, salt, butter and milk and knead into soft dough. Cover with a damp cloth and set aside for 40 minutes.
  2. Preheat oven to 180˚ C.
  3. Take blue cheese in another bowl and mash it with a fork. Add coriander leaves, chillies and crushed peppercorns and mix well.
  4. Divide the dough into 4 equal portions and shape each into a katori. Place some cheese mixture into each katori, bring the edges together and pinch to seal and shape into a ball. Roll out each stuffed ball into medium thick disc or kulcha.
  5. Place the kulchas on a baking tray and brush with some ghee. Put the tray in the preheated oven and bake for 15-20 minutes.
  6. Bring the tray out of the oven, arrange the kulche on a serving platter and serve hot.
