When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Malai Tikka Roll - SK Khazana Recipe

  • Boneless chicken cut into cubes 400 grams

  • Readymade roomali rotis 4

  • Yogurt 1/2 cup

  • Green chilli paste 1 teaspoon

  • Ginger-garlic paste 1 1/2 teaspoons

  • Nutmeg powder 1/4 teaspoon

  • Green cardamom powder 1/2 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Chaat masala 1 1/2 teaspoons

  • Salt to taste

  • Fresh cream 2-3 tablespoons

  • Cornflour 1 teaspoon

  • Butter for greasing

  • Malai 2 tablespoons

  • Green chutney 1 tablespo to serve

  • Lemon juice 1/2 tablespoon

  • Onion rings as required

  • Fresh mint leaves as required

  • Lemon wedges as required


Step 1

Preheat the oven at 180º C. Line a baking tray with aluminum foil and grease it with butter.

Step 2

Mix yogurt, green chilli paste, ginger-garlic paste, nutmeg powder, cardamom powder, garam masala, 1 tsp chaat masala, salt, fresh cream and cornflour in a bowl. Add the chicken cubes and mix well. Set aside to marinate for 15 minutes.

Step 3

Arrange the marinated chicken pieces on the greased baking tray. Bake for 15-20 minutes or till the chicken is cooked.

Step 4

Transfer chicken into a bowl, add malai, green chutney, remaining chaat masala, lemon juice, onion rings and fresh mint leaves and mix gently.

Step 5

Place each roomali roti on the work top, place a portion of the chicken mixture at one end, fold three sides and roll it.

Step 6

Grease a griller with some butter, keep the rolls on it, brush some butter on top of the rolls and close the griller. Grill till grill marks appear on both sides.

Step 7

Wrap the rolls in tissue and place them on a serving platter. Serve hot with green chutney, onion rings and lemon wedges.
