Cheesy Penne Pasta

Penne pasta cooked in overloaded cheese sauce along with fresh cut vegetables. This one is to die for! This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 cups penne pasta , boiled
  • 1 cup cheese sauce
  • 1 tablespoon olive oil
  • 1 tablespoon chopped garlic 
  • 1 medium onion , finely chopped
  • 1/2 cup tomato concasse
  • Salt to taste
  • 1/2 teaspoon paprika
  • Crushed black peppercorns to taste
  • 1/2 teaspoon sugar
  • 1/2 small yellow zucchini , sliced and halved
  • 1/2 small green zucchini , sliced and halved
  • 1 small red capsicum , cut into triangles
  • 5-6 fresh basil leaves + for greasing 
  • Parmesan cheese shavings for garnishing

Method

  1. Heat olive oil in a non-stick pan, add garlic and onion and sauté till translucent.
  2. Add tomato concasse, mix and saute for 2 minutes. Add salt, paprika, crushed peppercorns and sugar, mix well and saute for a minute.
  3. Add yellow and green zucchini and red capsicum and mix well. Add ½ cup water, mix and cook for 2 minutes. Add tear basil leaves, add to the pan and mix well.
  4. Add cheese sauce and mix well. Add pasta and mix well. Add parmesan cheese shavings and mix.
  5. Transfer into a serving bowl, garnish with some cheese shavings and a basil leaf and serve hot with garlic bread.
