Ingredients
- 2 cups penne pasta , boiled
- 1 tablespoon olive oil
- 2 tablespoons chopped garlic
- 1 medium onion , finely chopped
- 1 1/2 cups tomato concasse
- Salt to taste
- Crushed black peppercorns to taste
- 1 teaspoon red chilli flakes
- A pinch of castor sugar
- 3-4 basil leaves
- 4-5 black olives , pitted and sliced
- 10 grams parmesan cheese
- Fresh basil sprig to garnish
- Garlic bread slices to serve
Method
- Heat olive oil in a non-stick pan, add garlic and onion, mix and sauté till onion turns a light brown and raw smells disappear.
- Add tomato concasse, mix and sautefor 1 minute. Add salt, mix and saute for 1-2 minutes.
- Add pasta, crushed peppercorns and chilli flakes, mix and cook for 1 minute. Add castor sugar and adjust salt, mix and cook for 1-2 minutes. Tear basil leaves and add and mix well.
- Transfer thepasta into a serving bowl. Put black olive slices and garnish with parmesan shavings and basil sprig.
- Serve hot with garlic bread slices.
