Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Penne Arrabiata Recipe

  • Penne pasta , boiled 2 cups

  • Olive oil 1 tablespoon

  • Garlic , chopped 2 tablespoons

  • Onion , finely chopped 1 medium

  • Tomato concasse 1 1/2 cups

  • Salt to taste

  • Crushed black peppercorns to taste

  • Red chilli flakes 1 teaspoon

  • Castor sugar a pinch

  • Basil leaves 3-4

  • Black olives , pitted and sliced 4-5

  • Parmesan cheese 10 grams

  • Fresh basil sprig to garnish

  • Garlic bread slices to serve

Method

Step 1

Heat olive oil in a non-stick pan, add garlic and onion, mix and sauté till onion turns a light brown and raw smells disappear.

Step 2

Add tomato concasse, mix and sautefor 1 minute. Add salt, mix and saute for 1-2 minutes.

Step 3

Add pasta, crushed peppercorns and chilli flakes, mix and cook for 1 minute. Add castor sugar and adjust salt, mix and cook for 1-2 minutes. Tear basil leaves and add and mix well.

Step 4

Transfer thepasta into a serving bowl. Put black olive slices and garnish with parmesan shavings and basil sprig.

Step 5

Serve hot with garlic bread slices.
