Cheese Crusted Chicken with Salad-Cook Smart This dish is special – cheese makes it rich and the salad makes it nutritious This recipe is from FoodFood TV channel By Sanjeev Kapoor 18 Oct 2018 in Recipes Course New Update Main Ingredients Boneless chicken breasts, Processed cheese Cuisine Fusion Course Main Course Chicken Prep Time 16-20 minutes Cook time 21-25 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Cheese Crusted Chicken with Salad-Cook Smart 2 Boneless chicken breasts 6 tablespoons Processed cheese grated 2 tablespoons Mayonnaise 2 Garlic cloves for greasing Oil Salad 8-9 Button mushrooms 7-8 sprigs Fresh curly parsley sprigs 8-10 sprigs Fresh coriander sprigs 1 tablespoon Lemon juice to taste Salt 1 tablespoon Green chilli sauce 6-7 Mixed salad leaves (iceberg, lollo rosso) to taste Black peppercorns crushed 2 tablespoons Extra virgin olive oil Method Preheat oven at 180ºC. To make salad, slice mushrooms and place in a bowl. Roughly chop parsley sprigs and add. Roughly chop coriander sprigs and add. Add lemon juice, salt and chilli sauce and mix well. Refrigerate till chilled. Keep the chicken breasts on the worktop and make incisions on them. Spread 1 tablespoon mayonnaise on each. Roughly chop garlic cloves and spread equally on each breast. Grease a baking dish with oil and place chicken breasts on it. Top each with 3 tablespoons cheese, press lightly, put the dish in the preheated oven and bake for 20-25 minutes. Tear salad leaves and add to the chilled salad bowl. Toss well. Add crushed peppercorns and olive oil and toss again. Prepare a bed of salad on a serving dish.
