Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Bread Pakoda-SK Khazana Recipe

  • White bread slices 8

  • Potatoes boiled, peeled and grated 1 cup

  • Gram flour (besan) 1 1/2 cups

  • Oil 1 1/2 tabl to deep fry

  • Mustard seeds 1 teaspoon

  • Curry leaves 6-8

  • Asafoetida (hing) 1/4 teaspoon

  • Green chilli paste 1 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Red chilli powder 1 teaspoon


Step 1

Heat 1½ tablespoons oil in a non-stick pan. Add mustard seeds and sauté till the seeds splutter.

Step 2

Add curry leaves, asafoetida and green chilli paste, mix well and sauté for a minute. Add ¼ teaspoon turmeric powder and mix.

Step 3

Add potatoes and mix well. Add salt, mix and cook for a minute. Remove from heat and set aside to cool.

Step 4

Take gram flour, remaining turmeric powder, chilli powder and salt in a bowl, add sufficient water and whisk well to make a batter of coating consistency.

Step 5

Spread a generous portion of potato mixture on 4 bread slices and cover with remaining bread slices.

Step 6

Heat sufficient oil in a kadai.

Step 7

Cut sandwiches into triangles, dip in the batter and deep-fry in hot oil till golden brown. Drain on absorbent paper.

Step 8

Serve hot with tomato ketchup.
