Ingredients list for Blooming Onions

  • 4-8 Medium onions
  • 1 cup Refined flour
  • to taste Salt
  • 1 teaspoon Dried thyme
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Dried oregano
  • 1 teaspoon Garlic powder
  • to taste Black peppercorns crushed
  • 1 tablespoon Paprika
  • 1/2 teaspoon Red chilli powder
  • 1/2 cup Milk
  • 2 Eggs
  • 2 tablespoons Malt vinegar
  • to deep fry Oil
  • to serve Green mayonnaise
  • to serve Tomato ketchup

Method

  1. Mix together flour, salt, dried thyme, onion powder, dried oregano, garlic powder, 1 teaspoon crushed black peppercorns, paprika and red chilli powder in a bowl.
  2. Whisk together milk, egg, vinegar, a little crushed black peppercorns and salt in another bowl.
  3. Make 8 slits on the onions without cutting through. Separate the layers to create flowers.
  4. Dust the onion flowers with the flour mixture taking care that the flour mixture goes into the slits too. Dip in the milk-egg mixture and dust them with the flour mixture once again. Refrigerate for 10-15 minutes.
  5. Heat sufficient oil in a kadai. Gently slide the onions into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
  6. Arrange them on a serving plate and serve hot with green mayonnaise and tomato ketchup.
