Bean Vegetable Rice

Cooked rice tossed with baked beans, carrot, green capsicum, mushroom, some masalas, cheese and jalapenos. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Bean Vegetable Rice

  • 1 cup Baked beans
  • 1 medium Carrot peeled and cut into ½ inch cubes
  • 1 medium Green capsicum cut into½ inch pieces
  • 6-8 Button mushrooms sliced
  • 3 cups Cooked rice
  • 2 tablespoons Butter
  • 1 tablespoon Garlic chopped
  • 1 medium Onion finely chopped
  • to taste Salt
  • ½ teaspoon Cumin powder
  • 1½ teaspoons Red chilli powder
  • For topping Processed cheese grated, ¼ cup +
  • 2 Pickled jalapenos sliced
  • to serve Salad mixed vegetable

Method

  1. Heat butter in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté till golden.
  2. Add carrot and sauté for 1 minute. Add 2-3 tablespoons water, mix, cover and cook on low heat for 2 minutes.
  3. Add capsicum and mushrooms, mix and cook for 1-2 minutes. Add baked beans and mix well.
  4. Add salt, cumin powder and chilli powder, mix and cook for 1 minute. Add cooked rice, lightly mix and cook on low heat for 5 minutes.
  5. Add cheese and mix. Add jalapenos and mix well.
  6. Top with some cheese and serve hot with mixed vegetable salad.
