Ingredients
- 12-15 medium prawns, peeled, cleaned and deveined
- Salt to taste
- Crushed black peppercorns to taste
- ½ cup dark soy sauce
- ¼ cup sake (rice wine)
- ¼ cup mirin
- 4-5 spring onion greens strips
- 3 tablespoons fine brown sugar
- 2-3 spring onions, cut into 2 inch pieces
- 1-2 tablespoons oil
Method
- Take prawns in a bowl, add salt and crushed black peppercorns and mix well. Set aside for 5 minutes.
- To make yakitori sauce, heat a pan, add dark soy sauce, sake, mirin, spring onion greens strips, ¼ cup water and brown sugar, mix well and cook till sugar melts.
- Continue to cook, stirring in between, till the mixture thickens. Strain into a bowl and set aside to cool slightly.
- Meanwhile, thread spring onion bulb strips and prawns alternately on satay sticks.
- Heat oil in a non-stick grill pan. Place the satay sticks with prawns in it and grill on high heat for 2-3 minutes. Flip the satay sticks and brush the sauce generously over them. Cook the other side for 2-3 minutes as well. Flip again and apply the sauce on the other side as well.
- Arrange the satay stick on a serving plate, serve hot with remaining yakitori sauce.
