Urad Dal Khichdi

Ingredients

  • ½ cup split black green gram with skin (chilkewali urad dal), soaked for 2 hours and drained
  • 5 tablespoons ghee + to drizzle
  • 1 tablespoon cumin seeds
  • 2 teaspoons chopped ginger
  • 1 green chilli, chopped
  • ½ teaspoon asafoetida (hing)
  • ½ cup rice, soaked for 15 minutes and drained
  • A pinch of turmeric powder
  • Salt to taste

Method

  1. Heat 3 tablespoons ghee in a pressure cooker. Add cumin seeds and once they start to change the colour, add ginger, green chilli, asafoetida and sauté for 1 minute.
  2. Add rice, urad dal, turmeric powder, salt and mix well.
  3. Add 3½ cups water and mix well. Cover with the lid and cook on medium heat till 4-5 whistles are released.
  4. Open the lid once the pressure settles completely. Mix well. Add remaining ghee, ¼ cup water and mix well. Cook for 2-3 minutes more.
  5. Transfer in a serving plate, drizzle ghee, garnish with coriander sprig and serve hot.
