Urad Dal Khichdi

By using chilkewali urad dal the fibre level is enhanced thus making it more nutritive. Cooked with simple masalas, this khichdi is as tasty as the one made with moong dal. This khichdi will take a bit longer to get ready but the end result is well worth it.

·         ½ cup split black green gram with skin (chilkewali urad dal), soaked for 2 hours and drained

·         5 tbsps ghee + to drizzle

·         1 tbsp cumin seeds

·         2 tsps chopped ginger

·         1 green chilli, chopped

·         ½ tsp asafoetida (hing)

·         ½ cup rice, soaked for 15 minutes and drained

·         A pinch of turmeric powder

·         Salt to taste

·         Fresh coriander sprig to garnish




1.      Heat 3 tbsps ghee in a pressure cooker, add cumin seeds and once they start to change colour, add ginger, green chilli and asafetida, mix and sauté for 1 minute.

2.      Add rice, urad dal, turmeric powder and salt and mix well.

3.      Add 3½ cups water and mix well. Cover and cook on medium heat till 4-5 whistles are released.

4.      Open the cooker once the pressure settles completely. Mix well. Add remaining ghee and ¼ cup water and mix well. Cook for 2-3 minutes more.

5.      Transfer into a serving plate, drizzle ghee, garnish with coriander sprig and serve hot.
