Summer Salad

The name suggests it all! A salad, perfect for summer made with seasonal fruits and veggies like tadgola (water apple), white onion, watermelon and many more! A super delicious creation.

Ingredients

  • 6 ice apples (tadgola)
  • 20-25 assorted lettuce leaves
  • 1 cup watermelon balls
  • 2 baby red radish, cut into thin roundels
  • 4-5 cherry tomatoes, halved
  • 1 small English cucumber, cut into triangles
  • ½ small carrot, peeled, roughly chopped, boiled and drained
  • 1 small white onion, thinly sliced
  • 20-25 fresh mint leaves
  • 10-15 fresh coriander sprigs
  • Dressing
  • 2 teaspoons dried mango powder (amchur)
  • ½ teaspoon chaat masala
  • ¼ teaspoon red chilli powder
  • Crushed black peppercorns to taste
  • Salt to taste
  • ¼ cup apple juice
  • 2 tablespoons chopped fresh coriander leaves
  • ½ teaspoon onion seeds (kalonji)

Method

  1. Peel ice apples and cut each into 4 pieces.
  2. To make the dressing, mix together dried mango powder, chaat masala, red chilli powder, crushed black peppercorns, salt, apple juice, coriander leaves and onion seeds in a bowl. 
  3. Tear the lettuce leaves and transfer into a large bowl. Add watermelon balls, red radish roundels, cherry tomatoes, English cucumber, carrot, ice apple, white onion, mint leaves and coriander sprigs. Drizzle the prepared dressing and mix gently. 
  4. Transfer into a serving bowl and serve immediately.
