Ingredients
- 600 grams purple yam (kand), peeled, cut into 8 roundels and steamed
- 4 burger buns, halved and toasted
- ½ cup refined flour (maida)
- 2 teaspoons garlic powder
- ½ teaspoon smoked paprika powder
- 2 teaspoons onion powder
- ½ teaspoon dried oregano
- Salt to taste
- 1½ cups panko breadcrumbs
- ½ teaspoon dried red chilli flakes
- 2 tablespoons chopped fresh parsley leaves
- Ready-made corn flour slurry
- Oil for deep frying
- Mustard mayo for applying
- Lettuce leaves as required
- 8 cheese slices
- Chips to serve
Method
- Take refined flour in a large plate, add garlic powder, smoked paprika powder, onion powder, dried oregano and salt and mix well.
- Take panko breadcrumbs in another large plate, add salt, red chilli flakes and parsley leaves and mix well.
- Take corn flour slurry in a bowl.
- Heat sufficient oil in a kadai.
- Coat each purple yam roundel with some refined flour mixture, dip it in the corn flour slurry and repeat this process one more time. Coat each purple yam roundel with panko mixture.
- Gently slide the roundels into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
- To make the burger, apply some mustard mayo on one side of both halves of each burger bun. Place some lettuce leaves on the base half of the burger bun. Place a fried purple yam roundel over them, top with a cheese slice, place another fried purple yam roundel over the cheese slice and place another cheese slice over it. Arrange some lettuce leaves and place the remaining burger bun half over it to make a burger. Secure with a toothpick.
- Keep the burgers on a serving platter and serve with chips.
