Ingredients
- 8 white bread slices
- ¼ cup ready-made pizza sauce
- ½ medium yellow capsicum
- ½ medium red capsicum
- ¼ medium green capsicum
- 1 medium onion
- 100 grams cottage cheese (paneer)
- ½ cup boiled sweet corn kernels
- 2 teaspoons schezwan sauce
- 1 teaspoon red chilli flakes
- ½ teaspoon dried mixed herbs
- 1 tablespoon mayonnaise
- Salt to taste
- 50 grams processed cheese block
- 50 grams grated mozzarella cheese
- Butter for applying
- Green chutney to serve
Method
- Cut yellow capsicum, red capsicum and green capsicum into ½ inch cubes and transfer into a large bowl. Dice onion, separate the layers and transfer into the same bowl.
- Cut cottage cheese into small cubes and put them in the same bowl as well.
- Add sweet corn kernels, pizza sauce, schezwan sauce, red chilli flakes, dried mixed herbs, mayonnaise and salt. Grate processed cheese directly into the bowl. Add mozzarella cheese and mix till everything is well combined.
- Apply some butter on one side of 4 bread slices. Place a portion of the mixture over them and spread it evenly. Cover with the remaining bread slices. Apply some butter on top of each sandwich.
- Heat a sandwich toaster, apply some butter on the base of the toaster and place the sandwiches over it with the butter side facing up. Close and cook, turning sides till both sides are evenly golden brown.
- Diagonally cut the sandwich in half and arrange them on a serving plate and serve hot with green chutney.
