Ingredients
- 250 grams cottage cheese (paneer), cut into ½ inch cubes
- 500 grams ready pizza dough
- 1 tablespoon butter
- 1 tablespoon olive oil + for brushing
- 1 medium onion, chopped
- 1½ tablespoons chopped garlic
- 5-6 sprigs of fresh thyme sprigs
- 1 large tomato, chopped
- Salt to taste
- 3-4 tablespoons tomato ketchup + to serve
- 1 teaspoon sugar
- 1 teaspoon red chilli flakes + for sprinkling
- 1 tablespoon chopped fresh parsley leaves + to garnish
- Refined flour (maida) for dusting
- Crumbled Mozzarella cheese as required
Method
- Preheat oven to 180° C
- Heat butter and olive oil in non-stick shallow pan, add onion and garlic, mix and saute for 1 minute. Pluck the leaves from fresh thyme sprigs and add to the pan. Mix well and saute till the onion turns translucent.
- Add tomato and salt, mix and saute till the tomato turns soft and pulpy.
- Add tomato ketchup and mix till well combined. Add sugar and mix well.
- Add paneer and red chilli flakes and mix well. Add parsley leaves and mix. Take the pan off the heat and allow the mixture to cool slightly.
- Knock back the pizza dough, knead lightly and divide the dough into 2 equal portions.
- Dust some flour on work top, place each dough portion on it and roll into a thin disc.
- Place a portion of paneer mixture on one side of each disc, sprinkle mozzarella cheese over it and roll tightly into a log. Pinch the edges to seal.
- Place the log on a baking tray lined with parchment sheet, brush olive oil generously on the log and sprinkle some red chilli flakes. Make a few slits at equidistance on the surface of the logs. Place the tray in the preheated oven and bake for 25-30 minutes.
- Bring the tray out of the oven and place the pizza roll on a worktop. Brush some olive oil on top of the logs. Garnish with parsley leaves, cut into thick slices diagonally and arrange on a serving plate.
- Serve hot with tomato ketchup.
