Ingredients list for Pineapple and Cottage Cheese Skewers with Roasted

  • 1 large Pineapple peeled and cut into cubes
  • 200 grams Paneer (cottage cheese) cut into cubes
  • 1 medium Yellow bell pepper cut into medium pieces
  • 1 medium Green capsicums cut into medium pieces
  • 1 medium Red bell pepper cut into medium pieces
  • 1 tablespoon Garlic chopped
  • 1½ teaspoons Mustard paste
  • ¾ cup Chipotle in adobo sauce
  • 1 tablespoons + for grilling Oil
  • to taste Salt
  • a few Iceberg lettuce leaves
  • for garnishing Mixed bell pepper strips
  • Green tomato salsa:
  • 4-5 Green tomatoes
  • 3-4 Jalapenos
  • 1-2 medium Onions halved with skin
  • 15-20 Garlic cloves with skin
  • 1 tablespoon Oil
  • to taste Salt

Method

  1. To make green tomato salsa, preheat oven to 230ºC.
  2. Place tomatoes, jalapenos, onions and garlic cloves on a baking tray. Drizzle oil and sprinkle some salt on top, place the tray in the preheated oven and roast for 30-35 minutes. Remove from oven and cool.
  3. Discard the skin of onion and garlic and blend them with roasted tomatoes and jalapenos into a chunky salsa. Refrigerate to chill.
  4. Insert the cubed pineapple, cottage cheese and peppers onto 8 inch skewers in any order of your choice. Repeat the procedure till all the ingredients are used.
  5. To make marinade, put garlic, mustard paste, chipotle in adobo sauce, 1 tablespoon oil and salt in a bowl and whisk well.
  6. Brush the prepared skewers with the marinade.
  7. Heat some oil in a non-stick grill pan. Place the skewers in it and grill, rotating the skewers, till evenly done from all sides.
  8. Tear lettuce leaves and place on a serving plate. Top them with pepper strips. Place the skewers on the side and serve immediately with the green tomato salsa.
