Ingredients

  • 25-30 button mushrooms, chopped
  • 10-15 Pro V Regal Walnuts
  • 4 slider buns, halved and toasted
  • 2 tablespoons oil + for shallow frying
  • 1½ tablespoons chopped garlic
  • 1 medium onion, chopped
  • 2-3 fresh thyme sprigs
  • Crushed black peppercorns to taste
  • Salt to taste
  • ½ teaspoon paprika powder
  • 1 teaspoon Worcestershire sauce
  • ½ cup dried breadcrumbs
  • Mayonnaise as required
  • Lettuce leaves as required
  • Shredded pickled purple cabbage as required
  • Tomato slices as required
  • Cheese slices as required

Method

  1. Put Pro V Regal Walnuts into a chopper and crush coarsely.
  2. Heat oil in a small non-stick pan, add garlic, onion, mushrooms and crushed walnuts. Remove the leaves off the thyme sprigs and add to the pan, mix and sauté for 4-5 minutes.
  3. Add crushed black peppercorns, salt, paprika powder and Worcestershire sauce, mix well and cook for 2-3 minutes. Set aside to cool.
  4. Add dried breadcrumbs and mix well. Divide the mixture into equal portions and shape into patties. 
  5. Heat sufficient oil in a shallow non-stick pan, place the patties in it and shallow-fry, turning sides, till evenly golden brown and crisp on both sides.
  6. Arrange the lower halves of sliders buns on serving plate, spread mayonnaise and arrange lettuce leaves on top. Place a patty on each half.
  7. Top up with pickled purple cabbage, 1 tomato slice and 1 cheese slice on top. Cover with remaining halves of the buns.
  8. Secure with wooden sticks and serve.
