Ingredients
- 2 medium red apples
- 8 tablespoons chia seeds
- 4 cups milk
- 8 tablespoons yogurt
- 4 tablespoons honey
- 6-8 tablespoons brown sugar
- 4 tablespoons butter
- 3-4 sprigs of fresh thyme + for garnish
- 2 one-inch cinnamon sticks + for garnish
- 16-18 digestive biscuits
- Black raisins as required
- Raisins as required
- Roasted and chopped walnuts as required
Method
- Take chia seeds and milk in a bowl and mix. Add yogurt and honey and mix well. Refrigerate for 1-2 hours.
- Halve the apples, remove the core and chop them roughly.
- Heat a shallow pan, add chopped apples, brown sugar, butter and thyme. Break the cinnamon sticks and add and mix. Cook for 3-4 minutes. Switch the heat off and allow to cool completely.
- Take digestive biscuits in a ziplock bag and coarsely crush with a rolling pin.
- To serve, put some chia mixture into individual serving glasses. Top with some apple mixture, some crushed biscuits, some black raisins, some raisins and some walnuts. Top it up with some more chia mixture, some more crushed biscuits, some more apple mixture, garnish with thyme sprigs and cinnamon stick. Serve immediately.
