Ingredients
- 6-8 Bombay ducks (bombil), cleaned
- Salt to taste
- ¾ teaspoon turmeric powder
- 1 small onion, chopped
- 1 teaspoon Agri koli masala
- 2 tablespoons chopped fresh coriander leaves
- 1 tablespoon ginger-garlic-green chilli paste
- 1 tablespoon lemon juice
- 1 cup gram flour
- 2-3 tablespoon rice flour
- A pinch of baking soda
- Oil for deep frying
- Green chutney for serving
Method
- Boil sufficient water in a deep non-stick pan, add salt, ¼ teaspoon turmeric powder and Bombay ducks, mix, cover and cook for 2-3 minutes. Drain and remove bones.
- Transfer the boiled fish into a bowl, add onion, Agri koli masala, coriander leaves, ginger-garlic-green chilli paste, remaining turmeric powder, lemon juice, gram flour, rice flour, salt and baking soda and mix well.
- Heat sufficient oil in a kadai, gently drop small portions of the mixture in hot oil and deep-fry till golden brown. Drain on absorbent paper.
- Arrange the bhajis on a serving bowl and serve hot with green chutney.
