Ingredients
- 1¼ cups ripe mango puree
- 1 fresh red chilli, finely chopped
- 1 green chilli, finely chopped
- ½ teaspoon red chilli flakes
- 1 tablespoon oil
- ½ tablespoon finely chopped garlic
- 1 teaspoon finely chopped celery
- 2 tablespoons castor sugar
- Salt to taste
- 1 teaspoon vinegar
Method
- Heat oil in a non-stick pan, add garlic and celery, mix well and saute for 1 minute.
- Add red chilli and green chilli, mix well and saute for 30 seconds.
- Add mango puree and mix well for 1 minute. Add red chilli flakes and castor sugar and mix well. Cook for 1-2 minutes.
- Add salt, mix and cook for 2-3 minutes. Switch the heat off, add vinegar and mix.
- Transfer the mixture into a serving jar. Allow to cool completely. Serve.
