Little Millet Phirni

Method

  1. Take little millet in a bowl, add sufficient water and wash 2 times. Add more water and let it soak for 15-20 minutes.
  2. Heat a non-stick pan, add milk and saffron, mix and cook for 4-5 minutes.
  3. Drain the little millet and add to the pan. Mix well and cook on medium heat for 5-6 minutes.
  4. Add almonds, pistachios and green cardamom powder, mix well and cook on medium heat for 6-8 minutes.
  5. Add sugar and continue to cook for 3-4 minutes more.
  6. Transfer the phirni into earthenware serving bowls, sprinkle blanched pistachios and saffron strands on top and set aside to cool.
  7. Refrigerate for 1-2 hours. Serve chilled.
