Ingredients
- ¾ cup little millet
- 3 cups milk
- 10-15 saffron strands + for garnish
- 2-3 tablespoons slivered almonds
- 2-3 tablespoons blanched and slivered pistachios + for garnish
- ½ teaspoon green cardamom powder
- ½ cup sugar
Method
- Take little millet in a bowl, add sufficient water and wash 2 times. Add more water and let it soak for 15-20 minutes.
- Heat a non-stick pan, add milk and saffron, mix and cook for 4-5 minutes.
- Drain the little millet and add to the pan. Mix well and cook on medium heat for 5-6 minutes.
- Add almonds, pistachios and green cardamom powder, mix well and cook on medium heat for 6-8 minutes.
- Add sugar and continue to cook for 3-4 minutes more.
- Transfer the phirni into earthenware serving bowls, sprinkle blanched pistachios and saffron strands on top and set aside to cool.
- Refrigerate for 1-2 hours. Serve chilled.
