Lal Mathachi Bhaji

One of the staple sabzis one will find in any Maharashtrian household on any ordinary day. Make sure you have jowar bhakris to go with it. This is Sanjeev Kapoor exclusive recipe.

Method

  1. Heat oil in iron kadai, add cumin seeds and once they start to change the colour, add garlic, mix and sauté for 30 seconds.
  2. Add onions, mix and sauté till translucent. Add salt, turmeric powder and green chillies and mix well.
  3. Add red amaranth, mix well and sauté on medium heat for 5-6 minutes.
  4. Add scraped coconut and mix well.
  5. Transfer into a serving bowl and serve hot with jowar bhakri.
