By Sanjeev Kapoor 20 Jul 2016 in Recipes Veg New Update Main Ingredients Red amaranth leaves (lalmaat), Oil Cuisine Mangalorean Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 1 large bunch red amaranth leaves (lal maath), roughly chopped 1 tablespoon oil 1 tablespoon minced garlic 2 medium onions, chopped 2 green chillies, slit 1/2 cup green peas Salt to taste 1/2 cup scraped fresh coconut Method Heat oil in a non-stick pan. Add garlic, green chillies and onion and sauté till onions turn translucent. Add amaranth and green peas, cover and cook on low heat till the amaranth wilts. Mix well, sprinkle some water, cover and cook for a minute. Add salt, sprinkle some more water, mix well, cover and cook for 2-3 minutes. Reserve 1 tablespoon coconut for garnishing and add remaining. Mix well.
