Tamdi Bhaji (Lal Maath Sabzi)

An extremely healthy and simple dish made with red amaranth and green peas. Serve this with hot bhakris. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 large bunch red amaranth leaves (lal maath), roughly chopped
  • 1 tablespoon oil
  • 1 tablespoon minced garlic 
  • 2 medium onions, chopped
  • 2 green chillies, slit
  • 1/2 cup green peas
  • Salt to taste
  • 1/2 cup scraped fresh coconut 

Method

  1. Heat oil in a non-stick pan. Add garlic, green chillies and onion and sauté till onions turn translucent.
  2. Add amaranth and green peas, cover and cook on low heat till the amaranth wilts.
  3. Mix well, sprinkle some water, cover and cook for a minute.
  4. Add salt, sprinkle some more water, mix well, cover and cook for 2-3 minutes.
  5. Reserve 1 tablespoon coconut for garnishing and add remaining. Mix well.
  6. Serve hot garnished with reserved coconut.
