Ingredients
- 400 grams tapioca (kappa), peeled and cut into 1 inch pieces
- ¼ teaspoon turmeric powder
- Salt to taste
- 6-8 garlic cloves
- 3-4 dried red chillies
- 20-25 curry leaves
- 10-15 madras onions, sliced
- 1-2 tablespoons coconut oil
- ½ teaspoon red chilli powder
- ½ teaspoon garam masala powder
Method
- Put tapioca pieces into a pressure cooker, add 2½ cups water, turmeric powder and salt and mix well. Switch the heat on and cook under pressure for 1 whistle.
- Open the cooker once the pressure has reduced completely. Strain the mixture.
- Meanwhile, to make the spice mix, put garlic cloves in a mixer jar. Add dried red chillies, 10-15 curry leaves and madras onions and grind to a coarse paste.
- Heat coconut oil in an earthen pan. Add the ground paste and sauté for 2-3 minutes. Add remaining curry leaves and mix well.
- Add boiled tapioca pieces and mix till well combined. Add red chilli powder and garam masala powder and adjust salt. Mix while lightly mashing with the back of a wooden spoon.
- Transfer into a serving bowl. Serve hot.
