Hare Dhaniye Ke Vade

This is another version of the most popular Maharashtrian snack Kothimbir Vadi. Flavourful and lightly spiced coriander fritters with a subtle sweetness give the vadas a totally different taste.

Ingredients    

  • 3 cups chopped fresh coriander leaves (hara dhaniya)
  • 1¼ cups gram flour (besan)                
  • 2-3 green chillies, chopped
  • ½ teaspoon turmeric powder
  • Salt to taste
  • A pinch of baking soda
  • ½ teaspoon chopped jaggery
  • 2 tablespoon hot oil + for deep frying
  • Green chutney for serving

Method 

  1. Heat sufficient oil in a kadai.
  2. Take coriander leaves in a bowl, add gram flour, green chillies, turmeric powder, salt, baking soda, jaggery and ¼ cup water and mix well to make a thick batter.
  3. Add 2 tablespoons hot oil and mix well.
  4. Drop small portions of the mixture in hot oil and deep-fry till golden brown and crisp.  Drain on absorbent paper.
  5. Arrange them in a serving platter and serve hot with green chutney.
