Ingredients
- 1½ teaspoons golden matcha powder
- ½ cup roughly chopped dark chocolate
- ½ cup butter, room temperature
- ¾ cup castor sugar
- 1 teaspoon vanilla essence
- 1 egg
- 1½ cups refined flour (maida)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 tablespoon corn flour
Method
- Cream together butter and castor sugar in a large bowl till the mixture turns light and fluffy.
- Add vanilla essence and break in the egg and whisk till the mixture turns light and well combined. Add refined flour, baking powder, baking soda, golden matcha powder and corn flour and mix well.
- Refrigerate this mixture for 1 hour.
- Preheat the oven at 180ºC.
- Scoop out portions of the cookie dough and arrange it on a lined baking tray keeping some distance between each cookie.
- Press some chopped chocolate pieces on each cookie. Bake in the preheated oven for 15-20 minutes.
- Take the tray out of the oven and set aside to cool. Arrange the cookies in a serving bowl and serve.
