Ingredients
- 100 grams feta cheese
- 20-25 baby spinach leaves
- 8 sourdough bread slices
- 1½ tablespoon olive oil + for brushing
- 8-10 garlic cloves
- 2 tablespoons butter
- Salt to taste
- 1 teaspoon red chilli flakes
- 1 teaspoon chopped fresh parsley leaves
- 1 teaspoon chopped garlic
- Crushed black peppercorns to taste
- Grated mixed cheese as required
- Wafers to serve
Method
- Preheat the oven to 180º C.
- Arrange the sourdough bread slices on the baking tray and brush olive oil on both sides of each slice. Bake in the preheated oven for 8-10 minutes.
- Heat olive oil in a non-stick pan, add garlic cloves and sauté till golden brown. Transfer the garlic cloves into a mortar and coarsely pound with pestle. Add butter and mix well.
- Add salt, red chillli flakes and parsley and mix well.
- Heat the oil remaining in the pan, add chopped garlic, mix and saute for 1 minute.
- Add baby spinach leaves, salt and crushed black peppercorns, mix well. Sauté for 1-2 minutes. Take the pan off the heat.
- Bring the toasted bread slices out of the oven. Spread the prepared butter over one side of each toasted bread slice.
- Spread a portion of the spinach mixture over half the bread slices. Sprinkle a portion of feta cheese, add a portion of mixed cheese, and cover with the remaining bread slices with the buttered side facing down. Place the sandwiches back in the preheated oven and bake for 5-6 minutes or till cheese melts.
- Cut the sandwiches in half, place them on a serving platter and serve immediately with wafers.
