Feta & Spinach Grilled Cheese

No onions and no tomatoes. A simple and easy-to-put-together sourdough bread sandwiches stuffed with feta, spinach and mixed cheese for a quick bite before heading out. Tasty and filling.

Ingredients

  1. Preheat the oven to 180º C.
  2. Arrange the sourdough bread slices on the baking tray and brush olive oil on both sides of each slice. Bake in the preheated oven for 8-10 minutes. 
  3. Heat olive oil in a non-stick pan, add garlic cloves and sauté till golden brown. Transfer the garlic cloves into a mortar and coarsely pound with pestle. Add butter and mix well.
  4. Add salt, red chillli flakes and parsley and mix well.
  5. Heat the oil remaining in the pan, add chopped garlic, mix and saute for 1 minute.
  6. Add baby spinach leaves, salt and crushed black peppercorns, mix well. Sauté for 1-2 minutes. Take the pan off the heat.
  7. Bring the toasted bread slices out of the oven. Spread the prepared butter over one side of each toasted bread slice.
  8. Spread a portion of the spinach mixture over half the bread slices. Sprinkle a portion of feta cheese, add a portion of mixed cheese, and cover with the remaining bread slices with the buttered side facing down. Place the sandwiches back in the preheated oven and bake for 5-6 minutes or till cheese melts.
  9. Cut the sandwiches in half, place them on a serving platter and serve immediately with wafers.
