Creamy Avocado Egg Toast

Avocados are known to be rich in fiber and vitamins C, E and K. Guacamole is a popular dip made with avocado but here we have used it to make these delicious sandwiches which are sure to satiate the most discerning palate.

Ingredients

  • 2 avocados, peeled, seeded and flesh mashed
  • 4 hard-boiled eggs
  • 4 sourdough bread slices
  • Butter for applying
  • Cream cheese for applying
  • ½ lemon
  • 4 tablespoons finely chopped spring onion bulbs
  • Salt to taste
  • Crushed black peppercorns to taste
  • Sriracha sauce for drizzling
  • Fried garlic for sprinkling
  • 4 tablespoons finely chopped spring onion greens
  • Toasted white and black sesame seeds for sprinkling

Method

  1. Heat a non-stick tawa.
  2. Apply butter on one side of all the sourdough bread slices and place them on the hot tawa. Apply some butter over the other side of the bread and toast till crisp on both sides.
  3. Place the toasted bread slices on the worktop. Apply cream cheese over one side of each toasted bread slice. Spread a portion of avocado mixture, squeeze a few drops of lemon juice over each, sprinkle spring onion bulbs, salt and crushed black peppercorns. Grate boiled eggs over each toast. Drizzle siracha sauce, sprinkle burnt garlic, spring onion greens and toasted white and black sesame seeds.
  4. Arrange the toasts on a serving plate and serve immediately.
