Ingredients
- 2 cups rice flour
- Salt to taste
- 3-4 tablespoons olive oil
- 2 tablespoons chopped garlic
- 2 tablespoons chopped fresh mixed herbs
- 2 teaspoons red chilli flakes
- Salt to taste
- Crushed black peppercorns to taste
- 2 tablespoons chopped fresh basil leaves + to garnish
- 2 tablespoons chopped fresh parsley leaves
- 1 teaspoon butter
- A few slices of parmesan cheese
- Toasted bread slices to serve
Method
- Pour 2 cups water into a deep non-stick pan, add salt, mix and boil for 1-2 minutes. Add rice flour and mix, cover and cook on low heat for 1 minute. Take the pan off the heat and transfer the dough into a large plate.
- Knead the dough using the back of a small ladle till it cools slightly. Once the dough is warm, start kneading with the palm of your hands till a smooth and soft dough is formed. Keep the dough covered with a damp muslin cloth.
- Dip your palm in water and divide the dough into small equal portions and shape each portion into a ball.
- Dip a fork in water and roll the fork over a ball to shape it into a gnocchi. Arrange these gnocchi in a steamer basket.
- Heat sufficient water in a steamer. Place the steamer basket over it, cover and steam for 5-10 minutes.
- Switch the heat off and remove the steamer basket and keep aside to cool slightly.
- Heat olive oil in non-stick wok, add garlic, mix and sauté on medium heat for 1 minute. Add fresh mixed herbs and red chilli flakes and mix well. Add the prepared gnocchi, toss well and saute for 2-3 minutes.
- Add salt and crushed black peppercorns and toss well. Add basil leaves and parsley and mix till well combined. Add butter and toss well.
- Transfer into serving bowl, sprinkle some parmesan cheese slices and few fresh basil leaves serve hot with toasted bread slices.
