Ingredients
- 2 large onions, peeled and cut into thick roundels and separate the layers
 - 4 eggs
 - 1 small onion, finely chopped
 - 2-3 chicken sausages, chopped
 - 2-3 green chillies, finely chopped
 - Salt to taste
 - Crushed black peppercorns to taste
 - ¼ teaspoon turmeric powder
 - ¾ teaspoon red chilli powder
 - 2-3 tablespoons finely chopped fresh coriander leaves + for garnish
 - 2-3 tablespoons oil
 - Tomato ketchup to serve
 
Method
- Break eggs into a large bowl, add onions, sausages, green chillies, salt, crushed black peppercorns, turmeric powder, red chilli powder and coriander leaves and mix till well combined.
 - Heat oil in non-stick pan, arrange the bigger rings of the onions in it. Pour some egg mixture in the centre of each onion ring. Cover the pan with a lid and cook on medium heat for 1-2 minutes. Remove the lid, flip the onion rings, cover the pan again and cook the other side for 1-2 minutes as well. Make more onion rings similarly.
 - Transfer the cooked egg rings onto a serving plate. Garnish with coriander leaves and serve hot with tomato ketchup.
