Egg Rings

Sounds impossible right? But here we have an amazing mini omelette with sausage chunks inside onion rings. Tastes just so awesome. Since the proof of pudding is in eating it, make them, eat them and enjoy them.

  1. Break eggs into a large bowl, add onions, sausages, green chillies, salt, crushed black peppercorns, turmeric powder, red chilli powder and coriander leaves and mix till well combined.
  2. Heat oil in non-stick pan, arrange the bigger rings of the onions in it. Pour some egg mixture in the centre of each onion ring. Cover the pan with a lid and cook on medium heat for 1-2 minutes. Remove the lid, flip the onion rings, cover the pan again and cook the other side for 1-2 minutes as well. Make more onion rings similarly.
  3. Transfer the cooked egg rings onto a serving plate. Garnish with coriander leaves and serve hot with tomato ketchup.
