Egg Burgers

Ingredients
· 6-8 hard-boiled eggs, peeled
· 2 chicken sausages
· 2 tsps olive oil + for drizzling
· 1 medium tomato
· Mustard paste as required
· 2-3 romaine lettuce leaves
· Mayonnaise for piping
· 2-3 cheese slices, cut into 2 inch squares
· Toasted black sesame seeds for garnish
Method
1. Diagonally slice sausages.
2. Heat olive oil in a non-stick pan, place sausage slices in it and saute for 1-2 minutes. Transfer onto a plate.
3. Thinly slice tomatoes. Vertically halve eggs.
4. Apply some mustard paste on one side of half the eggs. Place lettuce leaves, tomato slices on it. Place a two sausage slices over it. Pipe the mayonnaise and place a cheese slice over it. Cover each burger with the remaining egg halves. Secure each burger with a toothpick. Drizzle some olive oil on top.
5. Place them on a serving platter, garnish with black sesame seeds and serve immediately.
