Cherry And Cream Cheese Galette

Galettes are delicious crumbly and lightly sweet pastries. It’s more like a robust looking tart with the curvy and uneven edges that adds to the beauty. This one has a rich and creamy filling of cream cheese and fresh cherries.

Ingredients 

  • Dough
  • 1¼ cups refined flour (maida) + for dusting
  • ¼ cup + 1 tablespoon castor sugar
  • A pinch of salt
  • ½ cup cold butter cubes
  • 2-3 tablespoons cold milk
  • Stuffing     
  • 250 grams fresh cherries, pitted        
  • 1½ tablespoons castor sugar
  • ½ lemon
  • 1 tablespoon corn flour
  • Cream cheese mixture
  • 1 cup cream cheese
  • 1 tablespoon castor sugar
  • Milk for brushing
  • Castor sugar to sprinkle
  • Honey for brushing
  • Slivered pistachios to sprinkle

Method

  1. Take refined flour in a bowl, add castor sugar, salt and cold butter and rub in with your fingertips till the mixture resembles breadcrumbs. Add cold milk and knead to a soft dough.
  2. Wrap the dough with cling wrap and refrigerate for 1 hour.
  3. Preheat oven to 180° C.
  4. For stuffing, take cherries in a bowl, add castor sugar, squeeze lemon juice and corn flour and mix well. Set aside for 5-10 minutes.
  5. Mix cream cheese and castor sugar in a bowl.
  6. Bring the dough from the refrigerator. Dust some refined flour on the worktop, place the dough over it and divide it into 2 equal portions. Roll out each portion into a medium thick disk.
  7. Arrange them on a baking tray lined with a butter paper. Spread some cream cheese in the centre and top with cherry stuffing.
  8. Fold the edges over the stuffing and brush milk on top of dough, sprinkle castor sugar.
  9. Keep the baking tray in the preheated oven and bake for 20-25 minutes.
  10. Bring the tray out of the oven. Brush honey and sprinkle pistachios on top. Keep them on individual plates and serve warm.
