Ingredients
- Dough
- 1¼ cups refined flour (maida) + for dusting
- ¼ cup + 1 tablespoon castor sugar
- A pinch of salt
- ½ cup cold butter cubes
- 2-3 tablespoons cold milk
- Stuffing
- 250 grams fresh cherries, pitted
- 1½ tablespoons castor sugar
- ½ lemon
- 1 tablespoon corn flour
- Cream cheese mixture
- 1 cup cream cheese
- 1 tablespoon castor sugar
- Milk for brushing
- Castor sugar to sprinkle
- Honey for brushing
- Slivered pistachios to sprinkle
Method
- Take refined flour in a bowl, add castor sugar, salt and cold butter and rub in with your fingertips till the mixture resembles breadcrumbs. Add cold milk and knead to a soft dough.
- Wrap the dough with cling wrap and refrigerate for 1 hour.
- Preheat oven to 180° C.
- For stuffing, take cherries in a bowl, add castor sugar, squeeze lemon juice and corn flour and mix well. Set aside for 5-10 minutes.
- Mix cream cheese and castor sugar in a bowl.
- Bring the dough from the refrigerator. Dust some refined flour on the worktop, place the dough over it and divide it into 2 equal portions. Roll out each portion into a medium thick disk.
- Arrange them on a baking tray lined with a butter paper. Spread some cream cheese in the centre and top with cherry stuffing.
- Fold the edges over the stuffing and brush milk on top of dough, sprinkle castor sugar.
- Keep the baking tray in the preheated oven and bake for 20-25 minutes.
- Bring the tray out of the oven. Brush honey and sprinkle pistachios on top. Keep them on individual plates and serve warm.
