Ingredients
- 4 cheese slices, quartered
- 2 medium onions, sliced
- 1 cup tomato concasse
- 6 mini burger buns, halved horizontally
- 1 tablespoon olive oil
- 2 tablespoons chopped garlic
- 2-3 fresh thyme sprigs
- Salt to taste
- ¼ teaspoon crushed black peppercorns
- 1½ teaspoons red chilli flakes
- 1 tablespoon tomato ketchup
- ½ teaspoon paprika powder
- ¼ cup melted butter
- ½ teaspoon dried mixed herbs
Method
- Preheat oven to 180º C.
- Heat olive oil in a pan, add 1 tablespoon garlic and sauté till golden brown. Add onions, thyme and salt, mix and sauté for 2-3 minutes.
- Add tomato concasse, crushed black peppercorns and 1 teaspoon chilli flakes, mix and sauté for 1-2 minutes. Remove thyme sprigs.
- Add tomato ketchup and mix well. Add paprika powder, mix well and set the pan aside.
- Take melted butter in a bowl, add remaining garlic, dried mixed herbs and remaining chilli flakes and mix well
- Arrange lower halves of burger buns on a baking tray and spread a spoonful of the tomato mixture on each bun.
- Place two quarters of cheese slice on the mixture on each bun half and cover with the upper halves. Apply the flavoured butter on top. Keep the tray in the preheated oven and bake for 5-6 minutes.
- Bring the tray out of the oven, arrange the sliders on a serving platter and serve hot.
