Biyam Pindi Chips

In a way these are South Indian style namakpare. Made with rice flour, green chillies and curry leaves they have a distinct flavour that is so very irresistible. They can be served with cups of hot coffee or packed in tiffin box of your children.

Ingredients

  • 1 cup rice flour + for dusting 
  • 1 tablespoon butter
  • 1 teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon white sesame seeds
  • 2 green chillies, chopped
  • 8-10 curry leaves, chopped
  • Salt to taste
  • Oil for deep frying

Method

  1. Heat 1 cup water in a kadai, add butter, red chilli powder, turmeric powder, sesame seeds, green chillies, curry leaves and salt and mix well.
  2. Once the mixture comes to a boil, add rice flour and mix well. Take the pan off the heat and allow to cool.
  3. Divide the mixture into equal portions and roll into balls. 
  4. Dust some rice flour on the surface and roll out into a thin disk. Cut into diamonds and prick with a fork.
  5. Heat sufficient oil in a kadai. Slide the prepared pieces and deep-fry till golden brown and crisp. Drain on absorbent paper and allow to cool. 
  6. Transfer into a serving bowl and serve.  Or you can store them in an airtight container and serve when required.
