Bhoplyache Gharge

Hot puffed sweet pumpkin pooris or bhoplyache gharge is a popular Maharashtrian snack which is not only easy to make but also a crowd pleaser. Stays fresh for a long time, but will finish in one sitting because it's that delicious.

Ingredients

  • 1 cup grated red pumpkin
  • ¾ cup chopped jaggery 
  • 1½ cups whole wheat flour (atta)
  • ¼ cup rice flour
  • ½ teaspoon green cardamom powder
  • ¼ teaspoon nutmeg powder
  • Salt to taste
  • Banana leaves as required
  • Ghee as required
  • Oil for deep frying
  • Tea for serving

Method

  1. Take pumpkin in a parat, add jaggery and mix till jaggery melts. 
  2. Add whole wheat flour, rice flour, green cardamom powder and nutmeg powder and mix well. Add salt and knead to a soft dough.
  3. Grease a banana leaf with ghee, place a portion of dough on it and pat it evenly to a round disc. Make a small hole in the centre. 
  4. Heat sufficient oil in a kadai. Slide in the gharge, a few at a time, and deep-fry till golden brown and crisp. Drain on absorbent paper. 
  5. Arrange the gharge on a serving plate and serve hot with tea.
