Ingredients
- 1 cup grated red pumpkin
- ¾ cup chopped jaggery
- 1½ cups whole wheat flour (atta)
- ¼ cup rice flour
- ½ teaspoon green cardamom powder
- ¼ teaspoon nutmeg powder
- Salt to taste
- Banana leaves as required
- Ghee as required
- Oil for deep frying
- Tea for serving
Method
- Take pumpkin in a parat, add jaggery and mix till jaggery melts.
- Add whole wheat flour, rice flour, green cardamom powder and nutmeg powder and mix well. Add salt and knead to a soft dough.
- Grease a banana leaf with ghee, place a portion of dough on it and pat it evenly to a round disc. Make a small hole in the centre.
- Heat sufficient oil in a kadai. Slide in the gharge, a few at a time, and deep-fry till golden brown and crisp. Drain on absorbent paper.
- Arrange the gharge on a serving plate and serve hot with tea.
