Ingredients list for Varai ka Upma

  • 1 1/2 cups Varai or samo
  • 1-2 tablespoons Ghee
  • 1 teaspoon Cumin seeds
  • 2-3 Green chillies slit
  • 2 sprigs Curry leaves
  • to taste Rock salt (sendha namak)
  • 2 teaspoons Ginger-green chilli paste
  • 2 teaspoons Lemon juice
  • to garnish Fresh coriander leaves chopped
  • to garnish Fresh coconut scraped


  1. Heat ghee in deep non-stick pan, add cumin seeds and saute till their colour changes. Add green chillies, curry leaves and samo or varai, mix well and sauté lightly for 1-2 minutes.
  2. Add rock salt and ginger-green chilli paste and mix well. Add 3 cups warm water, mix well, cover and cook on low heat till varai is completely done. If necessary add a little more water so that the varai cooks well.
  3. Add lemon juice, mix well, cover and cook for 2-3 minutes.
  4. Transfer upma into a serving bowl, garnish with coriander leaves and coconut and serve hot.
