Ingredients list for Tak-A-Tak Tomato Pulao

  • 2 large Tomato
  • 3 cups Cooked rice
  • 3 small Onion
  • 2-3 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 1 medium Green capsicum
  • 1 1/2 teaspoons Ginger-garlic paste
  • 1 teaspoon Red chilli paste
  • 1/2 cup Tomato sauce
  • 1 tablespoon Pav bhaji masala
  • 1 medium Carrot, boiled and cut into small cubes
  • 1/2 cup Green peas, boiled
  • 5-6 florets Cauliflower, boiled
  • 50 grams Paneer (cottage cheese)
  • to taste Salt
  • 1 tablespoon Lemon juice
  • 3 tablespoons Fresh coriander leaves, chopped

Method

  1. Heat a deep non-stick pan. Cube the onions and separate the layers.
  2. Pour oil into the pan and add cumin seeds. Sauté till they are lightly browned.
  3. Add the onions and sauté. Dice the capsicum and tomatoes. When the onions turn a light golden brown, add ginger-garlic paste and sauté for a minute.
  4. Add red chilli paste, tomato sauce and pav bhaji masala and mix well.
  5. Add carrot, green peas, cauliflower, tomato and capsicum and mix.
  6. Cut the cottage cheese into small cubes and add to the pan. Mix gently and add salt and 1 cup water.
  7. Add lemon juice and mix well. Add coriander leaves and mix. Add the cooked rice and mix gently and let it get heated through.
    Serve hot.
