Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Stuffed Bread Pudla Recipe

  • Bread Slices 8

  • Gram Flour 4 tablespoons

  • Green capsicum chopped 1 small

  • Red capsicum chopped 1 small

  • Tomato finely chopped 1 medium

  • Cabbage finely chopped 2 tablespoons

  • Turmeric powder 1/4 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Green chilli finely chopped 1

  • Juice of ½ lemon

  • Salt to taste

  • Fresh coriander leaves chopped 1 tablespoon

  • Oil for shallow frying

Method

Step 1

Mix gram flour, green capsicum, red capsicum, tomato, cabbage, turmeric powder, garam masala powder, red chilli powder, green chilli, lemon juice and salt in a bowl. Add a little water and mix well to make a thick batter. Add coriander leaves and mix well.

Step 2

Heat oil in a non-stick pan. Place the bread slices on it one by one, pour a ladleful of batter on it and let the underside cook. Flip, drizzle some more oil on it and shallow-fry till evenly done from other side as well.

Step 3

Serve hot with green chutney and tamarind chutney.
