Ingredients list for Spinach Rice
- 2 cups Spinach chopped
- 3 tablespoons Rice
- 1 teaspoon Fennel seeds (saunf)
- 2 Black cardamom
- 1 inch stick Cinnamon
- 2 Cloves
- 1 medium Onion sliced
- 1 medium Carrot grated
- 1/4 teaspoon Red chilli powder
- 1 cup Basmati rice soaked
- to taste Salt
- 1 teaspoon Lemon juice
Method
- In a microwave bowl add ghee, saunf, black cardamoms, cinnamons and cloves. Cook on high uncovered for two minutes. Mix well.
- Add onions and micro on high uncovered for two min. Add spinach, carrots and red chilli powder and micro for two minutes.
- Add rice, salt and two cups of water. Mix gently. Micro on high uncovered for eight minutes. And then cover & cook for two minute.
- Add lemon juice and stir it and micro on medium for two minutes. Serve hot with raita or pickle.
