Ingredients list for Soyabean and Vegetable Star Crisps
- 1/2 cup Soyabean
- 2 small Vegetables boiled peeled and grated
- 1/4 cup Grated cabbage
- 1/4 cup Grated carrot
- 1/4 cup Green peas
- 1/2 cup Refined flour
- 1/2 cup+ for dusting Whole wheat flour
- 1 medium Onion chopped
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Dried mango powder
- 1 teaspoon Roasted cumin powder
- 2 teaspoons Green chilli paste
- to taste Salt
- for cooking Oil
- for garnishing Fresh coriander sprigs
- for serving Dollops of butter
- Raita
- 8-10 Fresh coriander sprigs
- 1 small Onion chopped
- 1 small Tomato chopped
- to taste Salt
- 1 1/2 tablespoons Yogurt
Method
- Combine soyabean flour, refined flour, whole wheat flour, potatoes, onion, cabbage, carrot, green peas, turmeric powder, dried mango powder, cumin powder, green chilli paste and salt in a bowl. Add sufficient water and knead into a soft dough and set aside to rest for 5-10 minutes.
- Dust the worktop with some wheat flour. Roll out the dough into a large thin sheet. Cut out star shapes using a star-shaped cookie cutter.
- Heat little oil on a non-stick tawa. Place the star shaped cut outs on it and fry till crisp and golden from both the sides.
- To make raita, chop coriander sprigs and put in a bowl. Add onion, tomato, salt and yogurt and mix well.
- Place the star crisps on a serving plate, garnish with coriander sprigs and serve with raita and dollops of butter.
