Ingredients list for Southern Style Fried Chicken
- 750 grams Chicken on the bone cut into large pieces
- 2 cups Buttermilk
- to taste Salt
- ½ cup Refined flour (maida)
- 1 tablespoon Cajun spice
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion powder
- 1 teaspoon Black pepper powder
- 1 teaspoon Cayenne pepper
- 1 teaspoon Paprika
- to deep fry Oil
- Butter
- 2 tablespoons Garlic finely chopped
- to taste Crushed black peppercorns
- ½ cup Fresh cream
- a few sprigs Fresh parsley chopped
Method
- Make incisions on the chicken pieces and put them in a bowl. Add salt, buttermilk and set aside for two to three hours.
- Mix together refined flour, Cajun spice, garlic powder, onion powder, pepper powder, cayenne powder, paprika and salt in a bowl.
- Strain the chicken pieces and reserve the buttermilk in the same bowl.
- Heat sufficient oil in a pan.
- Coat the chicken pieces in the flour mixture, dip in the buttermilk and coat again in the flour mixture.
- Deep-fry in hot oil till evenly done all around. Drain on absorbent paper.
