Ingredients
- 4 raw mangoes
- ¾ cup sugar
- Salt to taste
- ½ teaspoon roasted cumin powder
- Black salt to taste
- Ghee for drizzling
- Ice cubes as required
- 1 teaspoon red chilli powder
- ½ lemon
- 1 lemon, sliced
- Fresh mint leaves as required
- Fresh mint sprigs for garnishing
Method
- Peel the raw mangoes.
- Pressure cook raw mangoes in some water till 1-2 whistles are released. Open the lid when the excess air completely released.
- Heat a piece of coal directly on flame.
- Deseed the cooked raw mangoes and take out the pulp in a bowl.
- Heat raw mango pulp in a non-stick pan. Add sugar, mix and cook till it melts. Add salt, cumin powder and black salt, mix and cook for 1-2 minutes. Transfer in a bowl and cool.
- Put the hot coal in a small steel bowl and place the steel bowl in the center of raw mango pulp mixture bowl. Drizzle some ghee on top of hot coal, cover and keep for 2-3 minutes. Remove the steel bowl.
- To prepare one portion, grind together 3-4 tablespoons raw mango mixture, few ice cubes and ½ cup chilled water into smooth mixture.
- Mix together salt and chilli powder on a plate.
- Apply some lemon juice on the rim of individual serving glasses. Place the glass upside down over the chilli powder-salt to coat the rim.
- Put few ice cubes, 2-3 lemon slices and 4-5 mint leaves in each prepared glasses. Pour the raw mango mixture and serve chilled garnished with mint sprigs.
