Ingredients list for Seafood Chowmein
- 2 medium Squids cleaned and cut into thick slices
- 50 grams Rawas fillets cut into ½ inch cubes
- 12 Prawns (kolambi/jhinga) small, shelled and deveined
- 8 Clams blanched
- 200 grams Egg noodles boiled
- 2 tablespoons Oil
- 1/4 inch Ginger finely chopped
- 3-4 Garlic cloves finely chopped
- 1/2 medium Green capsicum cut into thin strips
- 1/2 medium Red capsicum cut into thin strips
- to taste Salt
- 1/2 teaspoon White pepper powder
- 1 tablespoon Soy sauce
- 1 tablespoon Oyster sauce
- 1/4 cup Spring onion greens finely sliced
- for garnishing Fresh coriander sprigs
Method
- Heat oil in a non-stick wok, add ginger and garlic and stir-fry for a few seconds.
- Add squids and sauté on high heat for a minute.
- Add fish cubes, prawns and sauté for thirty seconds.
- Add green and red capsicums and mix. Add salt and white pepper powder and mix.
- Add soy sauce, oyster sauce and one fourth cup water mix well.
- Add half the spring onion greens and clams and stir-fry for two to three minutes.
- Add noodles and toss well. Add spring onion greens and toss.
- Transfer into a serving bowl, garnish with coriander sprigs and serve hot.
