Ingredients
- 1 cup sattu
- ½ cup yogurt
- ½ teaspoon baking soda
- 4 tablespoons butter + as required
- ½ cup jaggery powder
- ½ cup whole wheat flour
- 1 teaspoon baking powder
- A pinch of salt
- ¼ teaspoon green cardamom powder
- ½ teaspoon vanilla essence
- 1 cup milk
- Banana slices as required
- Chopped almonds as required
- Chopped pistachios as required
- Maple syrup to serve
Method
- Take yogurt in a bowl. Add baking soda and mix well. Set aside.
- Heat butter in a deep nonstick pan. Add jaggery powder and cook till butter melts. Allow to cool slightly.
- Sift sattu, whole wheat flour, baking powder and salt in a bowl.
- Make a well in the centre, add yogurt mixture, butter -jaggery mixture, green cardamom powder, vanilla essence, milk and whisk well.
- Heat a nonstick tawa. Grease with some butter, spread a ladleful of batter.
- Cover and cook on medium heat for 2-3 minutes. Flip and cook on other side for 2 minutes.
- Pile up the pancakes on serving plate. Arrange banana slices on top.
- Sprinkle almonds, pistachios on top. Place some butter cubes in the centre.
- Serve with maple syrup.
